I'm putting in a new laundry with 50 washers and 30 double stacked dryers. Would it make any sense to install an extractor? Do customers really use them? Pros and cons please.

Wow! 50 washers and 60 total dryers?!?! No bottlenecks in your store! Very nice! How many of what capacity washers do you have?
Extrators save your gas in dryer use and time in the dryers for your customers. Having more than enough dryers for you customers to use as it is, you won't need an extractor. If you had more washers than dryers, then the extractors MIGHT be a good idea so to minimize bottlenecks.
On the other hand, extractors tend to be very expensive, and maintenance on them can get extensive ("they shake themselves apart!" is what I've heard). You also have to talk your customers into the benefits of doing an extra step between washing and drying and do a bit of handholding until your customers get used to using them on a regular basis.
