I am considering getting into the business, and I am concerned with the physical utility requirements of the building. In other words, what size sewer line, what size electrical service, what size water service and size of heater, ventilation requirements...
any suggestions???

Dusty,

Utility sizing is based on your equipment mix. A store with mostly large front loaders and top loaders will take a 2" - 3" water line. Whereas a store like mine with high eff. machines (Maytag Neptune) can take a smaller water line (1.5" for my store). Your sewer line is also determined via size of water line and type of equipment.

Hot water heater is the same. Large equipment, larger heater.

Electric is determined if you need 3 phase or just single phase. Size of service will depend again on equipment mix.

Ventalation for your hot water heater will be determined by the manufacturer of the hot water system.

Ventalation for dryers will be determined by the manufacturer.

Check with a local distribuitor, they will be able to assist you once you have a store size and estimated equipment mix.

Your local inspectors will also probably want certain requirements, so make sure you have them go over your plans before doing any work that may need to be changed to pass code. Paper changes are cheap, on site changes can be expensive.
