Can anyone tell me how to translate demographics into appropriate equipment mix. I am opening a new mat (2500 SF) and am working with a distributor I am comfortable with but would like to verify their suggestions.

Markets do vary......
So, visit other mats in your area and see what they have and more importantly what their customers use. You may need to spend a Sunday doing your laundry in each mat to get a good feeling of what you need.
If your market will let you, try to stay away from top loaders and go with more front load HE machines. 35lb machines are a good choice with a 50lb machine or two.
Round it out with some 30lb stacks to cover your washing capacity.

I don't have a real answer BUT i don't think it would hurt to ask your distributor how his conclusions were attained.
Can you advise me on which service you used for demographics and at what cost.
